Vacuum sealing is not a substitute for water bath canning or pressure canning. However, it can help preserve the freshness of dry goods such as beans, cereals, pastas, dehydrated and freeze-dried foods for months when paired with an oxygen absorber.
The Food Saver jar sealers are limited to mason jars with the two-part canning lids that can be hard to remove. With a PVC vacuum chamber and a vacuum sealer with an accessory port and hose (sealer and hose are not included), you can seal nearly any glass container, including spaghetti sauce jars. Simply put the lid on with a very light twist, place the top of the PVC chamber on, insert the hose and remove the air - creating a vacuum seal.
If the vacuum seal does not form, try backing off on the twist as the lid may be on too tight, preventing the vacuum sealer from removing the air from the jar inside the chamber.
The Small Chamber, measuring 8" x 4", can accommodate two 1/2 pint jars at the same time. Any jar less than 4" in diameter and up to 8" tall will fit. In the Medium Chamber, measuring 10.5" x 4", two pint jars or one quart jar can be vacuum sealed.
These PVC vacuum chambers are made to order, so please allow time for processing. It's important to note that they may have some manufacturing markings that can be difficult to remove. However, contact paper or paint can be used to dress up the chamber if desired.
